This zoom workshop will be led by myself (Nici Holt Cline) and my dear friend and expert bread baker, Kara Daume. We will focus on science, art, flexibility, skill, the variables, and the method. You will learn, help, and leave armed with the knowledge and confidence you need to incorporate this beautiful and satisfying ritual into your life.
It's live and we bake bread together, answering your questions along the way.

A virtual bread-making party, via zoom (with a bit of advance prep -- we will walk you through making a starter or help you find one).
The guidebook outlines how to make your starter, and we are here to help. You will begin the live class with a healthy starter and ready to rock n roll!
The workshop is from 9am-3pm, with lots of breaks! You choose how much to interact with the live instruction. You will also receive a recording of the workshop.
9-10am: zoom call in the morning as we learn all about sourdough and begin building our bread dough.
10a-1:30p (45 minutes of instruction, with hourly check ins as you get to know your dough) We walk you through every step of nurturing, turning, and forming your dough, with lots of time for live Q&A and sharing of the science and heart of sourdough. There might even be a dance party.
3:30 zoom call in the early evening as we bake and enjoy our bread together!
Comprehensive instruction by Kara and Nici. Feel free to tune in and out as you wish as it will all be saved and sent to you. Kids, dogs, real-life mess/madness, whatever you’ve got going on is 100% perfect and welcome.

Essentials:
- White flour
- Whole wheat flour
- Salt
- Digital kitchen scale
- Large bowl
- Cast iron dutch oven (a lidded vessel that is oven safe at 500ºF)
- Two medium-sized colanders or bowls
- Two dish towels
Handy, but not essential:
- Bread proofing baskets (instead of the colander/bowl)
- Bowl scraper (helps to get dough out of bowl / can use hands or large spatula)
- Bench scraper (for cutting your dough in half. a sharp knife will do) Proofing baskets with liners (ideal, instead of a colander or bowl)
- Lame (for scoring your formed boules. A razor or scissors work)
Kara Daume wears many hats--mother, accounting manager, board member, consultant, and lover of being in the mountains. She is at her best when she is working with her hands, in the dirt or in the kitchen. She has many years of baking experience, both professionally and personally, that has fueled a passion for the process of making a bread that nourishes.

The Heart of Sourdough
What a fabulous Sunday, learning from two masters and surrounded by a group of baking students! Nici and Kara were gracious, funny, super organized, and so encouraging through the whole class. The handout was excellent. Even now, two months later, I still hear their voices as I work with my dough. “What’s your dough telling you? Take your time. Take your dough with you. Make notes. You’ll still have bread!” I loved this experience and totally recommend it to anyone interested in sourdough bread!

So worth it.
Sourdough bread always intimidated me. I've made other breads before (who hasn't made bread of some form during the pandemic?) but sourdough always seemed "next level." But Nici and Kara do such an amazing job of making it easy to understand along with creating this really supportive and nourishing environment for the whole process. All the documentation is great and the actual live workshop is awesome! Nici and Kara aren't just creating bread, they are creating a community. They are so supportive and encouraging along the way. They acknowledge there may be mistakes and that's ok, at the end of the day we'll still have nutritious bread. Kara had a quote during the workshop that stuck with me, "Sometimes you just have to get your hands in the dough." And that can mean so much more than making bread, but life in general. Get out there and 'get your hands in the dough' and live life and have wonderful experiences. This Sourdough Workshop is one of those experiences, so do it, it's so worth it and you will not be disappointed! Thanks again for a great time!

I took your last class and have made 4 more batches since then. I’m obsessed. Each time it’s different but always works out in the end. I learn something new with each loaf ❤️.

SOurdough FANTASTIC!
I loved this workshop. I felt like a scientist, master baker and part of an amazing community AND ended up with delicious bread. Nici and her partners spent the ENTIRE day with us on Zoom and made it so easy, answered every question and led us to success by the end of the day. The sourdough PDF is also excellent, so easy to follow with some delicious recipes for other items included. Cannot recommend this highly enough. Just made my second batch of bread (picture included) on my own and continue to feed my own sourdough. Who knows, maybe someone will be using my starter in 100 years!

Beautiful Bread
This was not my first bread making class with Kara and Nici. Why repeat? Because it is fun! I also wanted to refresh what I learned initially in a previous class last year as I had not made bread on my own for some time. Kara and Nici take the mystery out of bread making in a relaxed manner. Their joy in bread making is a delight and inspires. Do yourself a favor, take this class even if you never thought you would want to make bread from scratch or had the ability. I did, and loved the experience.

Loved it
I really enjoyed The Heart of Sourdough class. I had never baked bread in my life and now I don’t think I’ll eat anything but homemade bread. Nici and her co-teachers made something that felt intimidating feel welcoming and stress-free. I just made my second loaf and two pizza doughs and I’ll never go back! Highly recommend.

I truly enjoyed my day of baking bread! I didn't know how it would work with so many people joining virtually.....but it was perfect!

Who knew bread could be life changing?
Making and creating with my hands has always been the best therapy for me. It is no different with making bread from scratch that also nourishes my family-body and soul. Since learning 4 weeks ago, I've made it my Sunday ritual to bake bread and we love it. I've begun gifting loaves and seeing the joy it brings people is so rewarding. Thank you for teaching me this life-long skill that I hope to pass on to my children and grandchildren. The class was a complete joy in a really hard time of life. I feel blessed.

Wonderful Class!
This was such a wonderful experience. Not only was it informative and practical (my bread turned out sooo good), but Nici had such grace and ease in her teaching. I enjoyed being on call with over 100 people, and it was not as overwhelming as that might sound. I felt a sense of community. THANK YOU!

What a wonderful way to make bread
This class was amazing! Nici and Kara were great teachers. As a total beginner to bread making I thought the pace and structure of the class was great. They answered so many questions and were gracious throughout. The class was a great way to feel connected to others during this crazy COVID time. I also really appreciated that Nici spoke about George Floyd and encouraged the class to speak out- it was incredibly thoughtful and important. I would definitely recommend this class to anybody! Like me you can be brand new and still enjoy delicious sourdough at the end of the day!

Loved this class
I highly recommend this class. It was such a fun way to learn how to make sourdough. Nici was so helpful and informative every step of the way. I’ve gone back and watched our recording again as I continue my bread journey solo and my loaves were even better the second time around. Nici’s positivity, encouragement and helpful tips are such a blessing! I’m so happy to have this lovely life skill and to be part of such a kind community.

Great and Informative Class!
While I wasn’t a complete beginner to bread-baking, I was new to sourdough. This class had plenty for me but the careful guidance to also help beginners. I learned so much, and I trust myself to keep trying on my own with the wonderful .pdf guide included. These ladies know their stuff!

Inspiration & eventual success
Thanks so much for the inspiration to make bread. I learned so much and I appreciate all of your knowledge. I was not successful in my first attempt; however, I kept feeding my starter for another week and voila! My suggestions for future classes: review the video and compare to the PDF and make sure that all those details are documented (i.e. dipping finger tips in water to turn); I don’t think a week is long enough to build a starter from crate - 2 is much better

You'll Bake Bread!
What a wonderful community experience during this time of crisis. Nici, Kara, and Corinne were on top of the knowledge, IT, and human connection during this virtual class. I bought the course for my mom and then decided to join her and bought one for myself. The instructions were clear, the Zoom platform worked well, and I've continued on with the bread baking, with 2 loaves proofing right now. Thanks!
