Buttery soft, the perfect weight and length, and pure joy to have in the kitchen. I first used it with a brioche cinnamon roll dough, and it was light enough to not squish out all the air bubbles yet I didn't have to put in a ton of elbow grease to spread the dough....magical to say the least. I can't wait to try it on cookies and other enriched doughs!
