WHY APPLES?

My step-by-step instructions and video guidance are designed to teach you how to can any high acid food (you'll learn all about pH and why that matters!) So if you've got apricots or raspberries to work with, it's a snap to plug into this course.

I had to pick a food to work with in the video and I chose apples! Good apples can be found year round. You needn't have access to an apple tree to have great apples to make applesauce. Also, it's a snap to whip up a few quarts of sauce with those unattractive apples chilling on your kitchen counter. We will help you select from what you've got whether it's an orchard or Costco.

Also: learn to can apples and you can any jam, sauce, spread, butter or salsa. Yes! In fact, it is easy to substitute a different fruit if you'd like! This course is designed to empower you to can any high acid food.

What do I need to buy and how much will that cost? I send participants a detailed tool list with links to purchase. In a nutshell: you will need jars ($10), a wide mouth funnel ($4 for plastic/$9 for stainless steel), jar lifter ($5-$9), lid lifter ($3), canning rack ($8-$10) and a few pots (one for cooking, one for processing).

What kind of apples do I get? How many? You will need about 3 pounds per quart and can use whatever apples you love. With the course, I give detailed suggestions on variety and where/how to buy.

How much time do I need to set aside for the course? I’d allow yourself 2-3 hours for your first time. Once you get the hang of the process it’ll be much faster!

Do I need to be worried about food safety? No! Well, not more than you worry about it now. I will address your concerns about canning and food safety. We are canning a high acid food so botulism cannot exist in our jars. And I am here to help you along and answer your questions!

Do this!

Nici makes it so fun and easy to can anything! She shares her favorite resources and tips to make everything taste it’s best, look the prettiest, and seal for preserving. I am so glad I took this course!

Jam Canning Class

I was part of an on-site, hands-on jam making and canning class with Nici. I am 73 years old and had not canned since I was in my 30s. Nici presented with expertise, good humor and simply understood instructions. It was fun and has given me the confidence to make jam for my grandchildren. I highly recommend! Trish

Success!

I was fortunate to spend a lovely afternoon learning the process of canning with Nici. My own insecurities in the kitchen quickly slipped away with Nici's simple and meaningful instructions. I surprised myself days later by successfully making my own grape jam with grapes from a local garden. I would encourage you to purchase the tools needed that she has put together for easy purchase so that you too can get started right away! Nici has so much knowledge to share and I would love to take another one of her courses! Happy Canning!

Super fun and informative!

I took a jam canning class in person from Nici and it was casual and fun and warm, really enjoyable. She made it simple and easy and gave us all the information we needed, while showing us as she went. We were all encouraged to participate and get hands-in experience as well. I would recommend it to anyone who is curious, and also may feel intimidated by canning - Nici makes it feel accessible and very doable and rewarding.

LOVED THIS CLASS!

If you are even the tiniest bit interested in taking this online course, DO IT. It was such a fun and rewarding experience! Nici organized it so that it's very easy to follow. I loved that I could pause and rewind the video as needed, and her materials were well designed -- informative and clear. My son and I had so much fun learning to can from this course, and I feel equipped with skills to try the process with different foods now!

You *CAN* do it!

My parents used to can bushels of tomatoes from our family garden and I always thought it was a mysterious and difficult process. I inherited their canning pot and it sat in my basement for ten years. I decided to take Nici's online preserving class and was pleasantly surprised to find it was an easy and affordable process. Nici provided both a video tutorial and written materials that were very easy to follow. I canned twelve pints of applesauce and purchased some recommended canning books for more recipes down the line. Nici was quick to answer questions and made the whole class an enjoyable experience. I highly recommend this class! It is both satisfying and joyful to preserve food and I promise you, it's much easier than you think! Thanks, Nici!

Great class for learning the basics of canning!

I really enjoyed this class! I've always been a little intimidated of the canning process, and this was a great way to learn. The videos were helpful because you could go back and listen again, or pause on instructions as you worked. Excited to see what is next!

Always wanted to learn to can!

I’ve always wanted to learn to can but felt nervous about teaching myself. When Nici announced this class I couldn’t have been more thrilled. I’ve followed her blog and shop for years and learned a lot from how she takes such joy in feeding her family- it felt like the perfect opportunity to finally learn! The class was so easy and I made 12 perfectly sealed jars of applesauce on the first try. The combo of the video and the step by step instructions was perfect. I had a few anxious questions (“is this what it’s supposed to look like at this stage?”, etc.) and Nici emailed me back quickly and warmly. I’ve already started my second batch this week! So glad I did this. Thanks Nici!!!
